Cooking a meal for under $15 for a family of four

Shrimp Pad Thai
Serves 4

2.5 oz oil
1T thinly sliced shallots
4 eggs, beaten
8 oz cleaned shrimp
4oz asparagus, cut into 1” length
4 oz scallion batons, 1” length
1lb rehydrated pad thai noodles
1 cup pad thai sauce
4 oz julienne napa cabbage
4oz bean sprouts
1 cup chopped peanuts
1 cup mix cilantro, mint & thai basil
Lime wedges

Heat a wok over medium high heat. Add canola oil and shallots, stir fry quickly until fragrant. Add egg fry quickly about 30 seconds then add shrimp, asparagus & scallion. Cook for another minute and half. Add noodles and stir fry for 3-5 minutes until noodles are slightly browned, add sauce mixing. Cook for another minute then toss in cabbage, bean sprouts & peanuts. Remove from heat and serve immediately with a herb garnish & wedges of limes

Pad Thai Sauce

2 cups sweet chili sauce
¼ cup fish sauce
¼ cup soy sauce or tamari
1T chopped garlic
Juice of 2 limes

Mix well
