To purchase tickets:
1 lb of good-quality bittersweet or semisweet chocolate
8 oz (1 cup) cream – the richer and higher in butterfat, the better
1 ounce of butter, softened
1/4 teaspoon fine grain sea salt
Heat cream until it’s just boiling, pour over chocolate and salt, and let sit for 30 seconds. Whisk until blending, over a hot water bath if any chunks remain. Whisk in softened butter.
