Morning Harvest Cookies

1 cup unbleached flour
1 1/2 cups old fashioned oats
1/2 teaspoon baking SODA
1/2 teaspoon cinnamon
1/4 teaspoon salt

Mix and set aside

1/2 cup unsalted butter, room temperature
1/4 cup pure cane granulated sugar
1/2 cup light brown sugar

Cream butter and sugar until completely blended

1 egg
1/2 teaspoon vanilla
1/8 cup honey

Make sure all wet ingredients are evenly blended. Add flour mix to wet ingredients -- just until combined. Do not overmix. Add extras - do not overmix.

1/4 cup dried cranberries
1/4 cup chocolate chunks
1/4 cup chopped unsalted almonds

Scoop same size portions onto parchment lined tray. Refrigerate dough at least one hour (up to 24 hours) before or after scooping. Bake at 350 degrees for 12-15 minutes

Times may vary based on oven, size of dough, if dough was refrigerated
