Mozzarella with Crispy Proscuitto and Spinach

Ingredients:
8 slices prosciutto
1/4 cup olive oil
1 tsp lemon juice
2 cups spinach
1/8 tsp chili flakes
1/8 tsp salt
8 slices Italian bread
8 oz mozzarella

Directions:
On a griddle top place the prosciutto slices over medium heat and cook until lightly brown and crisp. Remove and then put the spinach into the oil add in the chili and lemon and salt. Drain. Build your sandwich by rubbing the bread with olive oil then a slice of cheese then prosciutto then spinach topped with more cheese. Place on the griddle and brown on each side until melted.
