Crispy Buffalo-Style Cauliflower “Wings”

one head cauliflower
4 cups flour
egg whites from 4 eggs
4 cups buttermilk
1 tsp salt
1 tsp pepper
1 tsp garlic powder
4 cups breadcrumbs
4 cups canola oil
buffalo sauce
fresh cut celery and carrots for garnish
Pour oil into a large saucepan over high heat, bring to 375 degrees. Cut the stem off of the head of cauliflower and cut into eighths. Break apart the cauliflower into 1-2 ounce florets. Mix/whisk together the egg whites and buttermilk. Toss the pieces in flour and wash in the egg white and buttermilk mixture. Mix together your breadcrumbs with garlic powder, salt and pepper. After you wash your pieces in the egg white/buttermilk, cover completely in bread crumbs and drop into the hot oil for 4 minutes. Remove pieces from the oil, place on a paper towel to remove the excess oil, and then toss the “wings” in the sauce. Plate your “wings” a alongside fresh cut carrot sticks and celery with your choice of ranch or blue cheese dressing.
