Grilled Jerk Shrimp with Mango Salsa

1 pound of Large shrimp

Jerk Marinade

Mango Mojo Salsa

Slaw Mix

Jerk Marinade:

chili flakes, tt

1 small red onion chopped

4-6 garlic cloves chopped

4 stalks scallions end trimmed

2 tablespoons brown sugar

1 teaspoon nutmeg

1 teaspoon allspice

1 teaspoon cinnamon

1 teaspoon dried thyme or use fresh if available

Salt and pepper to taste

Mix all ingredients together.

To use the marinade, simply toss your shrimp with the jerk marinade to cover as much of it as possible. It is best to coat them completely. Cover and refrigerate to let the flavors marinate the shrimp. Then grill or saute shrimp until cooked through.

Mango Mojo:

1 mango, peeled and coarsely chopped

1/4 cup fresh lime juice

1 large garlic clove

1 tablespoon chopped fresh jalapeño (including seeds)

1 teaspoon salt

2 tablespoons finely chopped fresh cilantro

Put all ingredients in the blender and pulse until its smooth. Finish with chopped cilantro and salt to taste.

Slaw Mix:

1/2 cup Shredded Cabbage

1/2 cup Shredded carrots

3 Julienne Green Onions

Fresh lime juice

Olive oil

Salt & Pepper

Toss the Shredded vegetables with the lime juice & Olive Oil
