Garlic Black Beans
Ingredients:
1 28 oz can black beans, drained
3-4 Tbs minced garlic
3 Tbs butter, margarine, or olive oil
1/2 cup vegetable broth
salt and pepper to taste

Optional:
minced shallots or scallions
finely chopped sun-dried tomatoes
chopped cilantro
chopped jalapeño

Directions:
Saute garlic (and optional vegetables, if desired) in oil over medium-high heat until softened but not quite browned.  Add broth, bring to boil and cook for at least one minute.  Add beans and stir until hot.  Serve alone or with rice.  Makes 2-4 servings
