Think you can’t have a hearty, soul-filling pasta without the guilt? Think again! Chef Rodolfo from Carnivale spills his secrets in this edition of Healthy Bites.

Carnivale’s  Fideos Recipe:


  • 2 lbs mushrooms, chopped
  • 1 Spanish onion, diced
  • 1 red pepper, diced
  • 1 green pepper
  • 2 cloves of garlic, pureed
  • 1 tsp thyme, chopped
  • chili flakes, to taste
  • 1 tsp ground cumin
  • 1 tsp dry oregano
  • 1 cup red wine
  • ¼ cup tomato paste
  • 1 cup tomato juice
  • 1 tsp porcini powder
  • salt and pepper, to taste
  • pasta


  1. Sauté the onions, peppers and garlic until translucent.
  2. Add the spices and dried herbs, sauté for a minute.
  3. Add the chopped mushrooms and cook until almost dry, then add the tomato paste and cook for 5 min.
  4. Add the red wine and reduce by half and then add the tomato juice and porcini powder. Cook this mixture until it is thick and season.
  5. Serve over pasta and enjoy—Chef Rodolfo used his own homemade gluten free noodles, but whole weat pasta would be another great option.
