Think you can’t have a hearty, soul-filling pasta without the guilt? Think again! Chef Rodolfo from Carnivale spills his secrets in this edition of Healthy Bites.
Carnivale’s Fideos Recipe:
Ingredients:
- 2 lbs mushrooms, chopped
- 1 Spanish onion, diced
- 1 red pepper, diced
- 1 green pepper
- 2 cloves of garlic, pureed
- 1 tsp thyme, chopped
- chili flakes, to taste
- 1 tsp ground cumin
- 1 tsp dry oregano
- 1 cup red wine
- ¼ cup tomato paste
- 1 cup tomato juice
- 1 tsp porcini powder
- salt and pepper, to taste
- pasta
Intsructions:
- Sauté the onions, peppers and garlic until translucent.
- Add the spices and dried herbs, sauté for a minute.
- Add the chopped mushrooms and cook until almost dry, then add the tomato paste and cook for 5 min.
- Add the red wine and reduce by half and then add the tomato juice and porcini powder. Cook this mixture until it is thick and season.
- Serve over pasta and enjoy—Chef Rodolfo used his own homemade gluten free noodles, but whole weat pasta would be another great option.
