The Recipe: 

Ma Po Tofu

 

The Ingredients:

1 large diced eggplant

1/2 cup olive oil

1/2 cup hoisin sauce

3/4 cup sambal chili paste

Kosher salt to taste

2 Tbsp Chinese black beans, rinsed

1 tsp ground szechuan peppercorn

1 block diced, extra firm tofu

2 cups cooked brown rice

Sliced green onions

 

The Method:

Brown eggplant cubes in olive oil, working in batches. Add oil as needed. When all eggplant is cooked, add to pan, add hoisin and mix thoroughly. Add sambal, black beans, and ground peppercorns. Taste for salt, sweet, and heat. All flavors should stand out. Add tofu and heat through. Serve over rice and garnish with sliced green onion.
