Recipe:

Flexitarian Sloppy Joes

Serves: 6

Ingredients:

2 cups low sodium vegetable broth

1 cup (192 g) brown lentils, well rinsed

Optional: 1/2 lb extra lean ground beef

1 Tbsp avocado oil

1 medium yellow onion, minced

3 cloves garlic, minced

1 bell pepper, diced

1 carrot, diced

1 15-ounce can crushed tomatoes

1 1/2 tbsp apple cider vinegar

1 Tbsp maple syrup

1 tbsp chili powder

1/2 tbsp ground cumin

1 tsp smoked paprika

To serve: 6 whole grain rolls

Instructions:

In a medium sauce pan over high heat, bring the vegetable stock to a boil. Add the lentils, cover and reduce heat to low. Simmer for about 20 minutes or until softened. Drain off any excess liquid.

While the lentils cook, heat the oil in a large saucepan over medium heat. Add the onion and beef if using. Saute until the beef isn't pink anymore, about 6 minutes.

Add the garlic, pepper and carrot and saute for 2 minutes or until softened.

Add the remaining ingredients from the crushed tomatoes to the smoked paprika. Add the cooked lentils and stir to combine.

Continue cooking the Sloppy Joe mixture for about 6 minutes or until thickened.  Serve warm on toasted whole grain rolls.
