Katsuji's Recipe for Roasted Chili Mango Salsa

2 cups of fresh or frozen mango chunks

1/4 cup of peeled garlic

1/2 cup of dry Chipotle

3 large Roma tomatoes

1 cup of apple cider vinegar

2 tbsp of kosher salt

1 large white onion, chopped

Preheat the oven to 350-degrees

Roast the onion, mango, garlic and tomatoes until almost charred/close to be burnt (yes burnt is good) in the oven.

Then transfer everything to a pot, add chipotle & apple cider vinegar and cook for 25-minutes at medium flame.

Then blend and add salt to liking.

To keep chilled, keep the salsa in the fridge. It will last around 15 days.
