Dovetail brings European-style craft brews to Chicago

CHICAGO -- Founded by two guys from Chicago who met during beer school in Germany, North Center craft brewery Dovetail Brewery stands out in an already crowded field in part through a brewing process that's pretty unique for Chicago craft breweries.

"Here at Dovetail we specialize in continental and European style ales and lagers we try and design beers for all the senses using traditional methods such as decoction mashing, open fermentation and cool ships," said Dovetail Brewery Owner & Brewer Bill Wesselink.

Dovetail has 6 styles of beers and can be found in more than 80 nearby restaurants as well here at their brewery. Their tap room is family & pet friendly and its Bring-Your-Own-Food. They also offer tours of the brewery on Saturdays, where you can catch a glimpse of their process.
