Shrimp Appetizers

1 medium onion, diced
1 red pepper, diced
1 cup cream sherry wine
1 stick of butter
1/2 cup olive oil
1 cup vegetable stock
1 lb. shrimp, cleaned, tail off
2 pkgs pre-made phyllo shells

Add butter and olive oil in a medium size pot. When butter is melted, add peppers and onion. Saute until soft. Add stock and sherry wine. Bring to a simmer. Add shrimp. Once shrimp is cooked (about 2-4 minutes), take scoop and add shrimp to phyllo cups.

To make vegetarian -- you can substitute the shrimp for tofu, eggplant, zucchini
