Chicago q Potato Salad

2 tsp pepper blend
2 Tbs salt
1 tsp pepper
2 tsp celery seed
2 tsp dry mustard
4 Tbs red wine vinegar
1 Tbs sugar
1/4 teaspoon cayenne
3 1/2-4 cups mayonnaise
10 lbs red potatoes
2 cups onion, small dice
2 cups green pepper, small dice
10 eggs, hard boiled, small dice
bacon for garnish
chives for garnish

Combine all dry ingredients. Cut potatoes and boil until knife tender. Toss dry ingredients with green pepper, onion, and eggs. Cool down potatoes in cooler. Add red wine vinegar. Add potatoes. Fold in mayo. Top with bacon and chives.
