CHICAGO -- The West Town address on Chicago and Wood is likely familiar to many. The building opened in the early 1900s as the Hub Theater -- its name inside the front door is the only piece which remains.
But history isn’t lost here. Forbidden Root Brewpub looks to marry new innovation with old world brewing.
"We focus on botanical beers that means we’re highlighting roots herbs spices in addition to the traditional beer ingredients, so we’re really working on capturing interesting and unique flavor profiles and building the beer around them," said head brewer BJ Pichman.
On their opening day Thursday, six beers are brewing -- the sublime ginger, wildflower pale ale, heavy petal stout, the forbidden root, to name a few. At full capacity, The Forbidden Root will have 16 on tap.
Chef Dan Weiland is tasked with coming up with a menu to compliment the beers --full dinners and lots of bar snacks.
