Spicy Black Bean Chili

1 Tbs extra virgin olive oil
1 medium white onion, diced
1 carrot, peeled and diced
2-3 celery stalks, diced
2 Jars Zoup! Good, Really Savory Vegetarian Broth
1 green pepper, diced
2 cloves garlic, chopped
4 mild green chille peppers, chopped
2 cans black beans, drained and rinsed
1 small can tomato paste
1 large can crushed tomatoes
1 large can diced tomatoes
1 tsp fresh thyme
1/4 cup cilantro, chopped
2 tsp brown sugar
1 tsp chili powder
1 tsp cumin
1/4 tsp red pepper (Cayenne)
1/2 tsp crushed red pepper

In a large pan heat extra virgin olive oil.  Add onion, carrots, celery, green peppers, and garlic.  Saute until the vegetables soften. Add broth and bring up to a boil. Reduce heat and add black beans, tomato products, sugar, spices, thyme, cilantro and chilies.  Simmer for 20 minutes
