Chocolate Pudding

Ingredients:
1 cup sugar
1/3 cup cornstarch
2/3 cup cocoa powder (dutch-processed)
pinch of Kosher salt
3 3/4 cups whole milk
8 egg yolks
3/4 cup heavy cream
1 tsp vanilla extract
1 3/4 cups high quality milk chocolate (can substitute dark if desired)

Directions:
Whisk together the dry ingredients. Add enough milk to the dry ingredients just to make a paste. Whisk the yolks into the paste. Bring the remaining milk and cream to a boil. Pour a little of the hot milk into the yolk mixture and whisk to combine. Add the rest of the milk into the yolks slowly while whisking. Return the mixture to the pot. Bring back to a boil, whisking constantly until thick, about 3-5 minutes. Strain over the chocolate, whisking to combine. Cover with plastic touching the surface and chill.
