Sugar Snap Pea Salad

1 cup shelled edamame

1 cup sugar snap peas

1 cup artichoke hearts – quartered

½ cup baby arugula

Toss all ingredients in bowl and then top with dressing (recipe below).


½ cup sweet chili sauce

½ cup sunflower oil

¼ cup apple cider vinegar

1 tablespoon soy sauce

Blend/whisk all ingredients until fully incorporated.


Panzanella Salad

½ loaf day-old bread – chopped up or torn apart into chunks

½ cucumber – chopped

1 large ripe tomato – quartered

½ red onion – slivered

½ cup mixed pitted olives – whole

½ cup strawberries – hulled & quartered

Mix all ingredients in a bowl, drizzle with some extra virgin olive oil and balsamic vinegar.
