Horse’s Neck

Ingredients:
2 oz Bulleit bourbon
1 oz ginger-cardamom syrup
1/2 oz fresh lime juice
1 dash Scrappy's Cardamom Bitters
1 oz Fever-Tree club soda
lemon peel for garnish

Directions:
Chill collins glass by placing in fridge/freezer or by filling with ice water (optional step). Measure and pour all ingredients, except club soda and garnish, into cobbler shaker. Fill shaker with ice, place top back on and ensure that shaker is securely closed. Give shaker 10 quick and vigorous shakes. Remove top of shaker, add measured amount of club soda and swirl shaker to combine all ingredients. Place top back on shaker and strain contents into ice-filled Collins glass. Garnish with a lemon peel in Horse’s Neck Style.
To create Horse’s Neck style, begin by taking a potato peeler to one tip of the lemon. Peel all the way around the lemon until half of the lemon is peeled. Then, take peel
and squeeze between thumb and forefinger downwards over the drink, so that the oils in the outside of the skin express onto the drink. Finally, insert lemon peel into cocktail with half of the lemon peel hanging over rim of glass.)

Summer Bay Mambo

Ingredients:
2 oz Blue Chair Bay banana rum
3/4 oz fresh pineapple juice
1/4 oz fresh lemon juice
3/4 oz simple syrup
2 blackberries
1 strawberry
Garnishes:
1 blackberry
1 strawberry
1 pineapple leaf

Directions:
Chill double old fashioned Glass by placing in fridge/freezer (optional step). Place 2 blackberries and 1 strawberry into the bottom of cobbler shaker. Using a muddler, or the back of a teaspoon, press down on the berries to release the juice. Measure and pour all remaining ingredients into cobbler shaker. Fill shaker with ice, place top back on and ensure that shaker is securely closed. Give shaker 10 quick and vigorous shakes, and strain contents into double old fashioned glass filled with ice. Garnish with 1 blackberry, 1 strawberry, and 1 pineapple leaf.
