Chilled Peach Soup

Ingredients:

1 Tbs butter
6 shallots, sliced
3 sprigs thyme
2 summer apples, quartered
8 large peaches, pitted
1 cup orange juice
1 cup water
1 Tbs raw honey

Directions:
Sweat shallots in butter using 6 quart sauce pan.  Once shallots are translucent, add apples and peaches. Continue to cook for 2 minutes over medium heat. Cover with orange juice, water and honey.  Let simmer for 20 minutes over low heat. Remove from heat. Add the thyme and let steep for 10 minutes. Purée and pass through fine strainer; season and then chill soup.  Once soup is chilled, serve with desired garnish.
