Jeff will be on-hand at Mariano’s newest location in Glenview (2323 Capital Drive) on Friday, July 10 from 12 to 2 p.m. to greet guests and serve up freshly-smoked pulled pork, topped with Pork & Mindy’s signature sauces. Jeff will also be appearing at the Taste of Chicago’s In the Kitchen with Mariano’s stage on Thursday, July 9 from 11:45 a.m. to 1:45 p.m. to showcase his noteworthy BBQ fare.

Barbecue Candy Bacon Burgers

Ingredients:
2 lbs 80/20 ground chuck
1 cup Pork & Mindy’s Sweet Sauce
kosher salt
fresh ground pepper
canola oil
8 strips of bacon
1 cup brown sugar
8 slices of aged cheddar cheese
French’s Fried Onions
4 romaine lettuce leaves
1/2 cup Pork & Mindy’s Sweet Heat Buttermilk Ranch
potato hamburger buns

Directions:
Place bacon in ziplock bag with brown sugar. Shake vigorously to coat bacon fully. Place on wire rack and cook in 350-degree oven and cook until crisp. Shape 6 oz. patties (about 3/4 inch thick) with the ground chuck into uniform patties (don’t overwork the meat). Make a depression in the center of each burger with your thumb so the burger won’t bulge in the middle. Preheat the grill or grill pan to medium-high heat and brush with oil. Season burgers with salt and pepper and place on grill. Cook until golden brown and slightly charred, turning only once (7 minutes for medium-rare).  Avoid pressing with a spatula. Top burger with sweet sauce, 2 slices of bacon and 2 slices of cheese the last minute of cooking. Remove from grill and place on bun with lettuce leaf on the bottom and top with crispy onions. Put 2 Tbs Sweet Heat Buttermilk dressing on top bun and place on burger.

Pork & Mindy’s Sweet Heat Buttermilk Dressing

Ingredients:
1/2 cup Pork & Mindy’s Sweet Heat Sauce
1/2 cup mayonnaise
1/4 cup fresh buttermilk
1/2 tsp fresh dill
1/8 tsp fresh cracked pepper

Directions:
Mix all ingredients together

Pork & Mindy’s BBQ Green Beans

Ingredients:
2 pounds cut green beans
crushed toasted almonds
Pork & Mindy’s Sweet Sauce

Directions:
Cook green beans to specified instructions. Toss cooked green beans in sweet sauce to coat. Place green beans on grill, cook for 1-2 minutes per side until tender and caramelized.
Place on plate and top with toasted almonds.
