Grilled Prime Rib Roast

1 10 lb prime rib roast, cleaned and trimmed
1/4 cup chopped fresh thyme
1/4 cup chopped fresh oregano
1/4 cup chopped fresh basil
2 garlic cloves
3 Tbs kosher salt
2 Tbs fresh cracked pepper

Combine the herbs, garlic and the oil in a blender and mix to make the marinade. Marinate the roast overnight. After 24 hours remove the roast from the refrigerator and coat with salt and pepper. Leave the prepared roast at room temperature for about an hour in order to warm the roast up. This helps the roast cook evenly. Use this time to preheat and clean the grill. Prepare the grill, either gas or charcoal, by getting it up to about 250-300 degrees. The thermometer in the lid is the best place to tell if the grill is hot enough. Place the roast in a roasting pan and lightly tent with foil. Cook for about 1 hour and remove foil Continue cooking until the roast is dark brown and crusty and an 125 degree internal temp is reached. Cut the prime rib into desired size steaks and enjoy!!
