November Collision Burger “Turducky” Burger

1 tablespoon butter
1/4 medium yellow onions, minced
1 clove garlic, chopped
1/4 cup corn kernels (optional)
1 lb ground turkey
1 leg duck confit, shredded (from local meat market)
1/4 cup duck fat
1 Tablespoon coarsely chopped parsley
1/2 teaspoon chopped fresh thyme
2 Tablespoons low sodium soy sauce
favorite burger buns
eggs (fried sunny-side up, 1 per burger)
cremont cheese
bib lettuce
sliced red onion

In a large sauté pan sautée the onions, garlic, and corn in butter until tender. When you see that the mixture is starting to take on a bit of color (sugars are caramelizing) pour into a large bowl and let cool.  When veggies are cool add turkey, duck confit, duck fat and mix together. Add parsley, thyme, and soy sauce and combine all ingredients. Create into 4 6-ounce burgers and grill over wood fired grill. (or another favorite way to cook a burger) Serve on your favorite hamburger bun and dress with bacon, fried sunnyside-up egg, cremont cheese, bib lettuce, sliced red onion.
