Lunchbreak: Chef Sharone Hakman makes Hak’s BBQ bat wings

Hak’s BBQ Bat wings
Makes 5 bat wings (10 actual chicken wings)

Ingredients:
10 Chicken wings
2 oz Hak’s Chipotle Bourbon BBQ Sauce
2 oz Hak’s Thai Chili Tamarind BBQ Sauce
2 oz Hak’s Smoked Maple Mustard BBQ Sauce
2 oz Hak’s Habanero Pineapple BBQ Sauce
salt and pepper to taste

Directions:
Preheat your oven to 425 degrees.  Season the chicken wings with salt and pepper.  Place on a roasting rack and bake until golden brown.  About 25 minutes.   Arrange the wings on plate to look like bat wings by connecting the ends of 2 drumsticks together.  Serve with a variety of Hak’s BBQ sauces

Tombstone Chocolate Pot de Crème
Serves 6

Ingredients:
chocolate pudding
6 cookies of your choice, graham crackers will do fine as well (as the tombstone)
2 oz  Barlean’s flax, chia, coconut blend (as the soil)
1 small package of chocolate writing fudge (for the tombstone cookie)

Chocolate Pudding

Ingredients:
2 cups whole milk
1/2 cup sugar
1/3 cup natural cocoa powder
4 teaspoons cornstarch
3 large egg yolks
2 teaspoons pure vanilla extract
1/4 teaspoon fine salt

Directions:
Put 1 1/2 cups of the milk, the sugar, and the cocoa in a nonreactive saucepan. Bring to a simmer, over medium-high heat. Remove from the heat. Meanwhile, whisk the remaining 1/2 cup of the milk, cornstarch, salt, egg yolks, and vanilla in a bowl. Gradually whisk the hot milk into the egg mixture. Return to the saucepan and cook over medium-high heat whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more. Pour the pudding into 6 small cups. Cover with plastic wrap and refrigerate for at least 4 hours or ideally overnight until set.

Pot de crème

Directions:
Fill 6 ramekins with the chocolate pudding.  Top with the Barlean’s blend as the soil.  Using the chocolate fudge writer, write “RIP” on the cookie.  Place the cookie at the end of the ramekin.

Witches Wine

3 oz Apothic Red
3 raspberries muddled
0.5 oz pomegranate juice
club soda (about 2 oz)
blackberries for garnish
plastic Spider for décor

Directions:
Combine the first four ingredients in a glass filled with ice. Top with club soda. Garnish with blackberries and place plastic spider on straw or side of glass spider
