Country Ham Frittata

3 oz beaten eggs
1/4 cup whole milk
1 oz country ham
1 oz chopped wild mushrooms
1 oz goat cheese
1/2 oz arugula
salt and pepper, to taste

Crack eggs into small mixing bowl with milk and whisk thoroughly. Combine ham, mushrooms, and goat cheese with egg mixture, then add the arugula.  Season accordingly. Place into a small cast iron skillet. Place into an oven pre heated to 450 degrees.
Cook time 7-10 minutes.


When combining the ingredients with the egg mixture, thoroughly mix it to evenly spread the ham and veggies.

You can preheat your cast iron skillet to help promote browning of the frittata

Use a wooden tool instead of a metal fork or spatula when removing the frittata from the skillet
