Mercat a la Planxa

Romesco Sauce

1 quart roasted tomato
3 cups toasted almonds
8 cloves roasted garlic
3 Tbs honey
1 cup extra virgin olive oil
1/2 cup sherry vinegar
1 Tbs salt
1 quart roasted red peppers
1 quart canola oil

Process almonds, garlic and pepper in the Vita prep. Add tomato and honey. Emulsify with extra virgin olive oil, canola oil and sherry vinegar. Season to taste.
