Cherry Coconut Toffee

Ingredients:
1 cup unsalted butter
1/4 cup brown sugar
3/4 cup granulated sugar
2 Tbs water
1 tsp salt
1/2 tsp vanilla extract
1/2 tsp coconut extract
1/4 cup shredded coconut
3/4 cup chocolate
1/2 – 3/4 cup dried cherries

Directions:
Melt butter in small kettle. Add sugars, water and salt. Cook over medium high heat, stirring constantly, until your thermometer reads 285 degrees Fahrenheit (or 141 degrees Celsius.) Remove from heat and carefully stir in extracts (toffee will bubble, so be careful). Pour onto parchment lined baking sheet or into aluminum pan. Sprinkle with shredded coconut. Let cool for about an hour. Pour melted chocolate on top and sprinkle with dried chopped cherries, gently pressing the cherries into the chocolate. Let the chocolate set and then cut or break into desired pieces
