Salmon Puttanesca

two 6 oz salmon filets
2 Tbs extra virgin olive oil
1 16 oz can San Marzano Tomatoes
3 oz capers
3 oz black Kalamato Olives (remove pits)
3 cloves fresh garlic
fresh parsley
anchovies (optional)
salt and pepper
pasta (optional)

Sauté garlic and olive oil until garlic is golden brown. If using anchovies in your recipe, add them to olive oil and garlic to simmer. Add crushed tomatoes and cook for 10 minutes over medium heat. Add salmon filets with all remaining ingredients, cook for 10 more minutes, flipping filets half way through.
