Jackson’s Recipe

4 servings Uncle Ben’s Rice cooked
one bunch of chopped cilantro
juice of one to two limes
2-3 salmon fillets
a drizzle of extra virgin olive oil
banana leaves – soaked in water so they are pliable
1/3 cup lemongrass, sliced
1/3 cup ginger, sliced
3/4 cup red pepper, sliced
zest from one lime
salt and pepper to taste

Preheat oven to 400 degrees.  Lay out banana leaf on large cookie sheet.  Place fillets in center of leaf.  Drizzle fish with olive oil, top with ginger, lemongrass, red pepper, 1/2 of lime juice and all lime zest.  Fold banana leaf over fillets like a square packet making sure all 4 sides are tucked in.  Bake for about 10 minutes. Cook Uncle Ben’s Rice according to box. Once it cools a bit, toss in all of chopped cilantro and the other half of the lime juice.  Salt and pepper to taste. Serve with fish when it’s done baking in the leaf.
