Kobe Steak Kettle Burger

For the burger patties
6 each Kobe beef burger patties
3 tsp seasoning salt

For the buns
6 hamburger buns (a hearty burger bun is best)
3 Tbs bButter (unsalted and soft)

Burger toppings
6 slices sharp white cheddar, sliced thickly
grilled roasted cremini mushrooms
homemade steak sauce

Prepare the steak sauce and mushrooms. Remove patties from cooler at least 10 minutes before cooking to warm up the outside layer. Lightly season both sides of the beef patties. Prepare the grill for 2-zone cooking*. Sear the outside of the burgers on the direct heat side and move them to the indirect side to cook them through. Cook the burgers to desired temperature. Once they are a minute away from being cooked to your desired temperature, top each burger with the White Cheddar Cheese and melt the cheese with the lid closed on the grill.  When the burgers are finished, allow them to rest a minute or two in a warm place before serving. This will keep them from getting too messy. While the burgers rest, butter and toast the buns. Top the burgers with the mushrooms and steak sauce and serve promptly.

Grill Roasted Mushrooms

8 oz. cremini mushrooms, cleaned and quartered
4 Tbs olive oil
1/2 Tbs fresh garlic, chopped
1/2 Tbs fresh rosemary, chopped
1/2 Tbs    fresh thyme, chopped
salt and pepper to taste

Mix olive oil, garlic, rosemary and thyme in a bowl. Add mushrooms to bowl and gently coat the mushrooms with all ingredients. Lightly season with salt and pepper. Roast mushrooms in grill basket for 20 minutes, INDIRECT, at 400F with a closed lid. About halfway through grilling time, gently stir mushrooms and close lid.


1/2 cup ketchup
2 Tbs Jack Daniels Whiskey (or your favorite brand)
1 Tbs steak sauce
1 Tbs dark brown sugar
2 tsp Worcestershire Sauce
1/4 tsp granulated garlic
1/4 tsp Kosher Salt
1/4 tsp freshly ground black pepper

In a small heavy-bottom saucepan, whisk the sauce ingredients with 1/2 cup of water. Bring to a simmer over medium-high heat, then reduce the heat and simmer for 10 minutes, stirring occasionally.
