Philly Cheesteak Nachos

2# tortilla chips
2# Philly steak meat cooked
8 oz sliced mushrooms
1 lg green pepper julienned
1 med onion julienned
1/2# shredded Provolone Cheese or Cheez Whiz

Sauté peppers, onions, and mushrooms until translucent.  On cookie sheet, spread out nachos and top with peppers, onions, mushrooms and cheese.  Melt under broiler until cheese is stringy.

“Jersey Style” Meatball Parm Sliders

20 – 2 oz meatballs (your favorite recipe)
1 qt marinara sauce
30 Hawaiian slider rolls
1# shredded mozzerella
1/2# grated parmesan cheese
1 stick butter

Bring Marinara to boil.  Cook meat balls through in the simmering Marinara sauce.   Melt butter and brush on both sides of the Hawaiian rolls.  Toast under the broiler until golden.  Top with a meatball, mozzarella cheese, and parmesan cheese. (in that order)  place the sliders, open face under broiler until parmesan begins to brown slightly. Top with the other half of the roll.

Buffalo Wing Stromboli

2 – 8 oz balls of raw pizza dough
2# boneless chicken wings fried
6 oz of your favorite buffalo wing sauce
1# shredded mozzarella
8 oz crumbled blue cheese

Roll out dough to a rough rectangle shape.  Sprinkle on ½ of the cheeses.  Toss wings in the sauce and place ½ in a single layer across the cheese.  Starting from the long side closest to you, roll dough over the filling until closed.  Flip the ends under so you have a tube shape.  Bake on a cookie sheet at 350 degrees for about 30-35 minutes depending on your oven.  Dough should be cooked through and golden brown on top.

Chipotle Beef Satays w Caramelized Onion Ranch Dip

3# spinalis cut into 1/2” cubes
2 medium onions caramelized
1/4 c soy sauce
2 Tbs Chipotle puree
1/2 c Sugar
2 Tbs honey
10 oz of your favorite ranch dressing

In a bowl, mix the soy, chipotle, sugar, and honey well.  Add the meat and let marinade for 8hrs.  Skewer 3 pieces of beef on each skewer and grill or sauté.  Take 3 tablespoons of your onions and puree in a blender with the ranch dressing.  Serve skewers on a platter topped with the remaining onions and drizzled with the dressing.
