Lunchbreak: Collard Greens

Recipe:

COLLARDS (1 case)

Ingredients:

1 box collard greens

2 onions, julienned

1 ½ cup brown sugar

½ lb butter

2 12 oz bottles of sparkling water

10 whole garlic cloves, chopped

¼ cup smoked paprika

2 tablespoons garlic salt

¼ cup sriracha

2 cups of apple cider vinegar

 

Method:

  1. Wash collard greens
  2. Chop collard greens 1” wide
  3. In heavy sauce pot add butter, onions, garlic, sriracha, paprika, garlic salt, brown sugar, cook for 3 minutes,
  4. Mix in greens (fold in greens as they cook down)
  5. Add water, apple cider vinegar and Cook on low flame (about 1 hr ½) turning every 10-15 minutes until soft
  6. Serve
