Andy's Burger

Two 1/3 beef patties well done, mozzarella cheese, spicy mustard, hot drained giardiniera mix, toasted bun and lots of caramelized onions.

Chef Rey's You Don't Know Jack Burger

Ingredients:
7 lbs ground chuck
3 lbs short rib, ground

Blend ground beef, portion to 7 oz patties.

Garlic Aioli

Ingredients:
4 egg yolks
32 oz canola oil
1 oz salt
juice of 2 lemons
8 Tbs roasted garlic puree
1 1/2 Tbs mustard

Directions:
Add egg yolks, mustard and garlic puree in robo coupe. Slowly add oil. Add salt and lemon juice at the end. Season to taste.

Dill Pickled Tomatillos

Ingredients
2 Tbs creole seasoning
2 Jalapenos, split, Stem removed
3 Tbs coriander
4 Tbs dill seed
4 Tbs Kosher salt
2 cups sugar
40 cloves of garlice
4 cups white wine vinegar
4 cups water
8 lbs tomatillos, sliced 1/8th inch

Directions:
Toast spices. Clean and split garlic cloves. Bring to a boil, cool down. Pour cooled pickling liquid over sliced tomatillos.
