Sweet Lorraine’s Gooey Cheddar Cheese Sauce

Ingredients:
4 12 oz cans evaporated milk
2 cups low sodium vegetable stock
3 oz unsalted butter
4 oz all-purpose flour
2 oz grated parmesan cheese
2 lbs shredded extra sharp cheddar cheese
1 Tbs dry mustard
1 Tbs kosher salt

Directions:
Preheat oven to 350 degrees. Heat evaporated milk and stock while also melting butter in separate pot over medium heat. Whisk in flour with butter until combined. Pour heated milk mixture into butter/flour slowly. Whisk until smooth. Remove from heat and combine with remaining ingredients into a blender. Blend until smooth. Toss heated sauce with 2 lbs. of precooked Cavatelli pasta (or pasta of your choosing). Put noodles and cheese in large casserole dish and sprinkle top with extra cheddar cheese. Bake at 350 degrees until the sprinkled cheese is melted. Top with toppings of your choice and enjoy
