Cajun Chicken Lettuce Wrap, Roasted Corn Relish and Peach and Yogurt Pizza
Makes one serving

Cajun Chicken Lettuce Wrap:

Ingredients:
1 chicken drumstick
2 1/4 tsp Cajun seasoning
3/4 tsp chicken soup base
4 Tbs brown rice
1/4 cup black beans
1 ounce lime juice
1/2 cup Romaine lettuce
1 Tbs sour cream
1/8 cup shredded cheddar cheese
2 tsp Sriracha

Directions:
Rub chicken drumstick with 1/2 tsp Cajun seasoning.  Place on a sheet tray and bake at 375 degrees until cooked through and set aside. In a small pot, combine chicken soup base with 2 cups of water and brown rice.  Bring to a boil, then turn down, cover and simmer for 20 minutes until water is half way evaporated, then add black beans and continue to cook for 5 minutes. Fluff rice with a fork and add the lime juice, also adding remaining Cajun seasoning.  Mix thoroughly. Place chicken drumstick in middle section on plate. Separate 2 leaves from Romaine lettuce and layer rice with beans, cheddar cheese.  Then place on a bias (overlapping) over the chicken drumstick. Drizzle with sour cream and Sriracha.

Roasted Corn Relish

Ingredients:
1 cup frozen corn
1/4 cup green peppers, diced
1/8 cup sliced canned jalapenos, chopped
1/4 cup red onion, chopped
1 Tbs cilantro, chopped
1 tsp lime juice
1/8 cup shredded cheddar cheese
2 tsp Sriracha sauce

Directons:
Put corn in a dish and roast corn in a 375 degree oven for 30 minutes or until dark & golden. Dice green peppers and roast in a dish in a 375 degree oven for 10 minutes. Drain and chop jalapenos, red onion and cilantro. In a bowl, mix all ingredients including the lime juice, cheddar cheese & Sriracha together and serve.

Peach & Yogurt Pizza

Ingredients:
1 thin frozen pizza crust, par baked
1/2 cup canned & diced peaches
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
1/2 oz vanilla yogurt

Directions:
Spray pizza dough with cooking spray (Pam) and sprinkle 1/2 of cinnamon on it.  Bake dough at 350 degrees until golden brown. Cut pizza in 1/16th pieces. In a small pot, simmer peaches with juice, other half of cinnamon and nutmeg for 5-7 minutes. In a cup, scoop peach mixture and spoon yogurt on top. Wedge one piece of pizza crust into cup.
