Latkes

Ingredients:
10 medium Idaho potatoes, peeled
1 tsp garlic
1 tsp salt
1 tsp seasoned salt
1 tsp black pepper
1 egg
1/3 cup flour + extra for coating before frying
2-4 cups vegetable oil

Directions:
Boil potatoes for 20 minutes or until fork tender. Let potatoes cool. Heat oil in frying pan on med heat, oil should be about 1/2 inch high. Shred potatoes.  In a mixing bowl add shredded potatoes, seasonings and egg and 1/3 cup flour. Form patties about 3 inches in diameter. Dust with flour. Place in oil for about 2-3 minutes on each side or until golden brown.
