His brain operates half science, half chef and Homaro Cantu’s newest creation Berrista is a sweet marriage of both – without the guilt.
He calls it healthy junk food and there is no sugar on his pastries - thanks to the so called miracle berry.
Chef Cantu calls it flavor tripping and it’s something he’s dabbled in for years at his restaurants Moto and the shuttered Ing. At Berrista Café in Old Irving Park, it is a focal point of his pastries and carbonated fruit which complement the savory flatbreads and sandwiches painstakingly created by Chef Azeez Yusef.
Here everything is handmade and nothing contains refined sugar, chemicals or sugar substitutes. Pineapple and other fruit concentrates replace the sugar adding natural sweetness and aiding in the reaction of the miracle berry, even the syrup on the already popular chicken and waffle sandwich is sugar free.
Just about everything on the menu is locally sourced. Some of the herbs are even grown in house and the coffee menu is extensive, including a computerized Steampunk coffee machine which turns brewing into a science.
Food and drink are likely just the beginning of the futuristic food to come at Berrista.
