Creamy Cole Slaw

1 1/2 cups mayonnaise
1/4 c + 1 Tbs white vinegar
2 tsp sugar
1 tsp celery seed
1/2 tsp salt
1/2 tsp black pepper
1 head green cabbage
1/2 head red cabbage
1/2 lb. carrots
1/2 white onion, very small dice

Shred the cabbages, either with a knife or a food processor slicing attachment. Shred carrots on large side of box grater. Rinse white onion in cold water in strainer, and let drain until ready to use. Mix all dressing ingredients together until smooth. Mix all prepared vegetables, including onions, in large bowl. Add dressing, mixing with your hands for best distribution. Keeps well for one week.

BBQ Sauce

34 oz ketchup
1/2 cup water
1 1/2 cups apple cider vinegar
2 Tbs yellow mustard
1/2 cup light brown sugar
1/4 cup paprika
1/2 cup chili powder (or ground chiles... better!)
1 Tbs Onion Powder
1 Tbs garlic powder

Mix all ingredients and simmer for at least an hour.
