Mahi-Mahi Ceviche

Ingredients:
1 lb Mahi Mahi
3/4 cup fresh squeezed lime juice
3/4c fresh squeezed lemon juice
3/4c fresh squeezed orange juice
1/4 cup olive oil
1/4 cup diced red onion
1 diced plum tomato
1/2 minced serrano chili
1/2 diced avocado
1/2 tsp salt
1 tsp crushed corriander
1 tsp sugar
1/2 tsp ground black pepper

Directions:
Mix together the lime, lemon, and orange juice in a bowl.  Cut the mahi-mahi into small pieces, place in a bowl, and cover with 4oz of the mixed juices.  Allow the fish to “cook” in the juice for 15-30 min. In another bowl mix together the rest of the juice with the spices and chopped veggies.  After the fish has had time to cook, add it to the bowl, taste and season as needed.  Serve with tortilla chips and enjoy.
