Where else would you find traditional Irish foods on St. Paddy’s day weekend than inside a popular Chicago Italian spot?
For this weekend only, Frasca Pizzeria is rolling out a little Irish Flare, courtesy of chef and Irishman Kevin Ives. It’s the Irish Pizza.
“Our dough, it`s almost a Neapolitan style dough but we use kind of that yeastiness of the beer in it..Guinness,” Ives said.
Topping the Guinness dough are Irish staples potato puree, bacon, caramelized onions, and three cheeses. Before it hits the fire, the chef throws on a few herbs to liven things up.
The pizza is then cooked in a 700 degree oven with apple, cherry, and oak wood.
Frasca Pizzeria & Wine Bar is located at 3358 N. Paulina St. The Guinness Pizza is available March 14th – March 17th for $12.
