Jiaozi Dumplings

2.5 lbs ground pork
1 lb shredded napa cabbage
1/4 cup peeled and minced ginger
1/3 cup soy sauce
1/4 cup oyster sauce
1/4 cup sesame oil
1/2 cup minced onion
3/4 cup chicken stock
1.5 Tbs Kosher salt
1 package Dumpling Wrappers (50 ea)

Put shredded napa cabbage in colander, cover with salt and let stand for one hour.  Drain and press all the liquid from the cabbage. Chop napa cabbage.  Place all ingredients in a mixer or a kitchen aid with paddle attachment and mix together for 4-5 minutes.  Cool for 2 hours before forming into dumplings. Form dumplings. Steam.
