Lunchbreak: Nico Osteria

European Hot Chocolate with Marshmallows

Makes 1 quart

 

1/2 c heavy cream

3 3/4 c whole milk

10.5oz 75% “9″ chocolate

1/2 tsp salt

3 T + 1 tsp cornstarch

Directions:

Dissolve cornstarch in milk

Heat milk, cream and salt to a simmer

Whisk in slurry and bring to a boil

Pour on top of chocolate

Strain through chinois and blend with an immersion blender

Place in a large container, and line with plastic wrap so it doesn’t develop a skin

Let cool
