Smoked Tomato Cocktail Sauce

4 smoked tomatoes, skinned and diced
1 smoked jalapeno, skinned and diced
1/2 red onion, small diced
2 oz red wine vinegar
1 Tbs roasted garlic puree
1/4 bunch cilantro
Juice of 1 lime
1 cup ketchup
2 Tbs horseradish
zest of 1/2 lemon
salt and pepper to taste

Smoke the tomatoes and jalapenos. Dice the red onion and cover with the red wine vinegar.  Let sit for 10 minutes. Combine all ingredients and puree using a hand blender.  You want the sauce to be chunky-not pureed smooth-so don’t over work the sauce. Taste and adjust seasoning with salt, pepper and your desired amount of horseradish flavor
