Sweet Cranberry Hemp Balls

Ingredients:
1 3/4 cup gluten-free oats
1/3 cup gluten-free flour
1/3 cup hemp seeds
3/8 teaspoon guar gum
1/4 teaspoon fine sea salt
6 Tablespoons coconut oil
6 Tablespoons coconut nectar
1/4 cup dried cranberries

Directions:
Add all ingredients to big bowl. Mix and pour into 8×8-inch parchment lined pan. Put in oven at 325F for about 20 minutes. Make 1-inch balls with warm “dough” and then freeze for one hour. Place in mini cupcake liners and serve or pack as a gift.

Tips:

Grease pan before putting parchment in it so it doesn’t slip and slide

Melt coconut oil in microwave for 30 seconds before adding to mixture so it is evenly distributed

Remove spout from coconut nectar bottle for easy pouring

Get the dried cranberries that are sweetened with apple juice

When the kitchen smells like toasted oats check on the pan to see if it’s brown – then you know it’s ready
