Peanut Butter Sandwich Kabobs

Ingredients:
4 slices soft wheat bread
1/2 cup peanut butter
1/2 cup honey
3 to 4 tablespoons granola (optional)
4 skewers
Additional fresh fruit such as kiwi, strawberries, grapes or pineapple

Directions:
Trim crusts from bread. Gently press bread or flatten with a rolling pin. Spread each slice with 2 tablespoons peanut butter and 2 tablespoons honey. Sprinkle a little granola on each piece of bread.
Cut each slice in half. Firmly roll up each and thread the roll-ups and fruit onto skewers and serve as kabobs.

Sesame Noodle Salad

Ingredients:
1 box (16 ounces) spaghetti, cooked al dente
1/2 cup warm water
1/3 cup smooth peanut butter
1/4 cup soy sauce
2 Tablespoons rice vinegar
2 Tablespoons sesame oil
2 Tablespoons honey
pinch of red pepper flakes (optional)
2 garlic cloves, minced
3 teaspoons fresh grated ginger
2 cups fresh chopped assorted stir fry veggies (shredded carrot, pea pods, scallions, red pepper, chopped spinach)

Directions:
In a large bowl whisk together warm water, peanut butter, soy sauce, vinegar, sesame oil, honey, red pepper flakes, garlic and ginger until the mixture is very smooth. Add veggies. Toss well to coat. Refrigerate at least 30 minutes before serving.

Butterfly Snack Bags

Ingredients:
clothespins
googly stick on eyes
pipe cleaners
black marker
snack-sized, snap-and-seal bags
small snacks like grapes, Goldfish crackers, Cherrios, baby carrots, small pretzels, etc

Directions:
Stick the eyes to the clothespin. Use a marker to make a happy face on the clothespin. Fold a pipe cleaner in half and use a pencil to curl the ends. Fill each half of the baggie with the snacks. Zip closed. Clip the clothespin up the middle, forming wings on either side. Clip the pipe cleaner in the center of the bag. Clip the pipe cleaner as antennae. Have fun and fill the bag with 2 different snacks. One on each side.

Gone Fishin’ Snack Mix

Ingredients:
4 cups goldfish snack crackers
2 cups pretzel sticks
3 cups toasted oat cereal
2 cups gummi worms
2 cups almonds (optional)
snack size re-sealable bags

Directions:
Mix ingredients together in a big bowl. Scoop into snack bags. Great to pack in lunch boxes or for school snacks.
