Lunchbreak: Wild Idea buffalo burgers

Wild Idea Buffalo Burgers
Makes 3 to 4 burgers

1 Tablespoons olive oil
1/4 teaspoon Dijon mustard
1 teaspoon ketchup
1/4 teaspoon thyme
1 teaspoon salt & pepper
1 lb. ground buffalo

Mix all ingredients, but Buffalo together. Add Buffalo and mix thoroughly with hands. Pat into 3 or 4, 1/2″ patties. Place in refrigerator to firm up burgers. Grill over high heat (500 gas grill) for 3 minutes each side, closing grill lid during cooking time. This will produce a medium rare burger.

*Optional & my preference: Drizzle or brush burger with a touch more oil and grill for 30 seconds each side. This will put a nice char crust on the burger. This will produce a medium prepared burger.

Finish with a sprinkle of high quality finishing salt. Serve burgers on quality buns/bread or on a bed of salad greens and top or dress with desired condiments.

Grilling Tips for Burgers and Steaks:

Using grill brush or crumbled foil, insure grill burners and grates are completely clean of debris.

Preheat grill, all burners to high heat, 500*+. Lean meats cook best at high heat.

All grills are a little different so know your grill, ie: hot spots, internal temp, etc.

Before placing meat on grill, oil grill grates or use grill spray.

    Wow! That was so interesting. I love a good burger but quit eating them a few years ago, on my doctor's advice. How nice to know that you can literally "have your cake and eat it, too" with a health substitution of grass-fed bison. Sign me up!
