Kit Kat’s Skirt Steak with Chimichurri Sauce
4 eight ounce skirt steaks
In large skillet, heat 2 teaspoons of olive oil on medium high until almost smoking. Reduce heat to medium. Saute steaks 4-6 minutes per side for medium rare or to desired doneness. Let rest 5 minutes before slicing
Heat grill to medium. Reduce heat to medium. Grill steaks 4-6 minutes per side for medium rare or to desired doneness. Let rest 5 minutes before slicing.
1 cup parsley
4 cloves garlic
1/2 cup olive oil
3 Tablespoon red wine vinegar
1 Tablespoon finely chopped red onion
1/2 teaspoon salt
1 teaspoon dried oregano
1/2- 1 whole seeded jalapeno (depending on heat level you prefer)
Pulse parsley in food processor to chop. Add remaining ingredients and blend. Use sauce to baste steaks once while cooking. Serve sauce at table to accompany steaks.
