Sauteed Ramps and Sausage
2 teaspoons of olive oil
1 lb of mild Italian Sausage – out of the casing
2 bunches of ramps – ends taken off and slice
2 teaspoons of fresh lemon juice
Heat a skillet with olive oil on high heat. Brown the sausage, separating the pieces with a wooden spoon. Once the sausage has browned, add the bulbs, stems and leaves of the ramps and saute. Saute on high until the ramps have become tender and slightly caramelized. Top on pizza, rice or pasta!
