Over the centuries, the people of Kaskaskia have amassed hundreds of homemade recipes to tantalize and – some might say — test the taste buds of natives and visitors alike.
The recipes have been collected in two volumes of books titled “Family Favorites Through Tyme.”

Or, got a hankerin’ for some Barbecued Squirrel?
Here’s the recipe:
4 Squirrels
1/2 cup finely chopped onions
1/2 cup Worcestershire sauce
1 Tbsp. lemon juice
1/2 cup blackberry wine
salt and pepper
1/2 cup brown sugar
Skin squirrel. Salt and pepper well. Cook one hour and 15 minutes, covered, in a deep pan filled with about 1¿2 inch of water. Combine onion and next five ingredients. Pour over squirrels. Cook uncovered for 30 additional minutes. Add wine before serving. Bon Appetit!
